From Dreams to Reality:
the Birth of nopa bagels
nopa bagels: a piece of
New York in Madrid
No, nopa isn’t another NYC neighborhood like SoHo or NoLita. It’s our family: Nick, Olaya, Paloma, and Andrea.
After years in Brooklyn, where our twin daughters were born, we moved to Madrid and opened nopa in 2022, bringing a little piece of New York to Chamberí.
Nick’s love for food began with his grandmothers' recipes and grew through years of playing bass, baking, and studying at the International Culinary Center in SoHo. From sourdough to sushi, his passion keeps evolving.
nopa is our family table, and you’re always welcome.
Our Love For Bagels, Coffee, And Good Music
At nopa, we bring together what we love most: slow food, artisanal baking, specialty coffee, and jazz. It’s not just about great bagels; it’s about creating a space where people feel at home, one bite, one sip, and one song at a time.
A Space With Purpose
At nopa, we believe in conscious hospitality. We host everything from book clubs to repair cafés, language exchanges, and small celebrations, always to bring people together.
Sustainability guides our choices; we use natural, local ingredients and keep our bakery open so you can see the care that goes into every bagel and pastry.
