Nick’s journey brought him to Spain through an exchange program in Oviedo, Asturias, where he met Paloma, the love of his life. Enchanted by Spanish culture and cuisine, Nick eventually moved to Brooklyn, where he played bass professionally for over 18 years while mastering the art of baking and cooking at the prestigious International Culinary Institute in SoHo. But Nick’s culinary curiosity didn’t stop there. After leaving New York, he explored Asian cuisines and even trained as a sushi chef.
In December 2022, Nick, Paloma, and their twin daughters, Olaya and Andrea, made their dream a reality by opening nopa bagels in Madrid. Their vision was clear: to create a place that blends their love for slow food, artisanal baking, specialty coffee, music, and community into one welcoming space.
